What time do you wake up?

7am.

What is the first thing you do when you start work?

Control the freshness of the food that arrived on the day.

How much time do you take for lunch, and what do you eat?

Less than 10 minutes. I eat with the staff just before service.

How do you deal with stressful periods? How do you get through them?

I train in boxing. It helps me to relieve my stress.

What do you do when your body is screaming for a nap but time is lacking?

Sleep 10 minutes in front of my computer (usually at 3pm) and then take a coffee…

What is usually the peak of pleasure in your day, and what do you dislike the most about a typical day in your life?

My peak of pleasure is when customers have smiley faces when they leave Club Gascon. I really dislike it when problems arise with the staff.

How do you fill your leisure time?

Playing guitar and gardening.

What time do you usually go to bed?

Usually 1am, after diner service.
